Umbricelli are a special type of pasta made in Umbria, the region that gives this pasta its name. In the local dialect they are known as “strozzapreti” (priest-chokers) or more commonly as “bigoli”. This sort of robust spaghetti is made by hand with flour only. Today, pasta similar to Umbricelli can be purchased at large supermarkets while the handmade version can be found in Umbrian bakeries or pasta shops.
