Thanks to the mild climate and the particular fertility of the land, vegetables have always been grown in the areas near Lake Trasimeno; because of the extra-regional competition, in recent times the production has diminished until it disappears almost completely. Many local varieties of vegetables are at risk of extinction; the Institute of Genetic Improvement of the Faculty of Agriculture of Perugia has identified some, grown by families or small businesses in the areas bordering Lake Trasimeno, but destined to be consumed only by the local population. The broccoletti are very famous and consumed throughout the region: they are embroidered from the turnip plant if it is cutted before it blooms. They are widely used in the local gastronomic tradition because, if they are boiled and then sautéed in the pan, they take on a delicate and bitter taste, very pleasant.
Product description
Inflorescence and tender parts of the stem with leaves. Special feature of the Broccoletto del Lago is that it is grown in the sandy soils adjacent to Lake Trasimeno; this factor gives the Broccoletto a particular “bitterish” flavor.
