Evidence of the existence of cheese dates back over 2,500 years ago. Cheese was not included in the ritual banquets of the people of the region, but it is believed that the Latin word “caseus” (cheese) comes from the word “quatseio” of the ancient Umbrians (fermented food). Filled Cheese is characteristic because it is flavoured with truffle, chilli pepper, pepper, olives, aromatic herbs, onions and garlic, based on the tastes and local customs of the towns where the cheese is made. The maturation phase of the aging process gives the cheese an extremely unique taste and aroma, due to the loss of moisture, to the action of the microflora on the fatty substances and to the assimilation of the aromatic essences found in the ingredients used for the filling.
