Dairy products were already found in ancient Umbria between 1550 and 1000 B.C. Today, a Mixed Cheese also known as caciottone is made in the region. Prepared using sheep’s or cow’s milk it is typically found in the region’s traditional areas to the north. This cheese, with its balanced amount of fats, is compact with a rich and tasty flavour and has a strong and decisive aroma. A fine accompaniment to aged red wine.
Description
Semi-soft cheese made with sheep’s milk (20%) and cow’s milk (80%). Extremely tasty and aromatic, it is aged for at least 60 days and is made in wheels weighing 3 Kg
