Thanks to Umbria’s olive growing tradition, olive paste is one of the region’s specialties. It is made with the pulp of very ripe olives that are ground and later preserved in its own oil. Olive paste is sold in various forms (tubes, jars, tubs etc.) and can be served on its own or on spaghetti or bread. Mix with mushrooms or mayonnaise to make a spread for toasted bread or crostini. It can also be mixed with other ingredients to create delicious sauces.
