The Cecci family produces high quality extra virgin olive oil thanks to the modern continuous cycle oil mill located in Allerona. Despite the technological investment, the Cecci family has a strong bond with tradition, so much so that in the castle of Monterubiaglio, an ancient traditional press crusher is still active, which remains open for only three weeks a year to show the milling as it once was.
In the ancient oil mill of the castle there is an oil cellar / tasting room where lunches and tastings are organized throughout the year. A particularity of the production of the Cecci mill are the monovarietal oils of the frantoio, leccino and moraiolo cultivars, obtained thanks to a precision agriculture system, started with the census of the olive trees in the olive groves owned, which has identified the different varieties present, which today it allows to have a production that enhances the characteristics of each cultivar, thanks to the gradual harvesting and milling, according to the degree of ripeness of the different olives.
