The Pampepato is a ternan sweet of peasant origin; it is particularly “rich” and is traditionally prepared during the Christmas season. The ingredients are many: among the main, the dried fruit, raisins, candied fruit, honey and cooked must; everything is amalgamated with cocoa and pepper which gives the cake a strong and spicy flavor. The dough is divided into cakes that are cooked in the oven. It is a truly unique specialty of its kind, which can be tasted with local sweet wines or accompanied by a good coffee. If you add to the dough the sweet fruit jelly and almond paste you get the “yellow pan”
