In Umbria must is often used to prepare food or desserts during the harvest festivities. Especially in the countryside it is widespread consumption of the Bread of Mosto, a large sweet commonly cut to get the appetizing biscuits. It is made with the bread mass to which, after the first leavening, are added the seeds of anise, must and sugar; in this way we obtain a vein to be left to rise again. The dough is then cooked in a wood oven in the form of strips or braids and, once cooled, is cut into slices and then dried in the oven.
