Pinolate are typical Christmas sweets made with dried fruit, like many other winter desserts. Almonds are the main ingredient for these biscuits made by mixing the beaten egg whites with the same quantity of sugar and dried fruit. Bitter almonds are then added to give the Pinolate biscuits their characteristic and pleasant bitter flavour. Finally, the biscuits are rolled in both whole and chopped pine nuts. These biscuits are named after their external covering of pine nuts, or pinoli.
