The potato has existed in Umbria since the 18th century, but potato farming became more widespread after 1960 when a particular Dutch variety of this tuber was grown in the plains of Colfiorito. It has an irregular, elongated and oval form with a yellow pulp and red peel. It is widely used for preparing traditional dishes, gnocchi dumplings and panierini; furthermore, red potatoes are also wonderful when roasted over hot embers. Due to its limited production and the few growers, consumers must purchase these potatoes directly from the farmer (found in the plains of Colfiorito near the swampland which today is a splendid park).
