Savoury Easter cake, also known as Easter pizza, is shaped like an Italian panettone cake. Most commonly prepared in Umbria the night before Easter (hence the name), it is now made by bakers throughout the year. The main ingredient is a bread dough enriched with fresh pecorino sheep’s milk cheese cut into cubes, grated aged pecorino cheese, eggs and extra virgin olive oil. An excellent accompaniment to Umbrian salami and boiled eggs, which according to the tradition are served on Easter morning. Also wonderful when paired with other salami’s such as Umbrian capocollo.
