Strufoli are typically carnivally sweet. Their shape and size vary from region to region. The dough, with a soft textures, is fried in hot oil. The main ingredients are flour, eggs, sugar, extra-virgin olive oil and a liqueur such as rum or grappa, diluted separately with a little flour. Once fried, the strufoli should be drained for a few minutes on a sheet of absorbent paper. You can bathe them with a few drops of alchermes and can be served with honey melted in a saucepan.
