The origins of this sweet is tied to pagan rites, according to which the snake was a symbol of life and vigour and was worshipped like a god. Furthermore, its spiral shape also represents cyclical time. This ultra delicate, traditional speciality, which originates from the towns near Lake Trasimeno, has the shape of a reptile and is prepared with a dough made with almonds, sugar and beaten egg whites. Customarily served the day before Christmas, it is sold throughout the year.
